Rolo Brownie Bites

What’s better than a gooey, chewy brownie? A mini gooey, chewy brownie stuffed with a Rolo, of course! These bite-sized beauties deliver that rich chocolate hit with a molten caramel centre that’ll have you wondering what other magic you can tuck into brownies.
They’re dangerously quick to make and guaranteed to make your kitchen smell like a dream — perfect when you’ve got guests coming round or just want a little something sweet and special.
Ingredients
(Makes 16 brownie bites)
120g (4¼ oz) dark chocolate, finely chopped
80g (5½ tbsp) unsalted butter
160g (¾ cup + 1 tbsp) caster sugar
2 large eggs
100g (¾ cup) plain flour
16 frozen Rolos (freeze them first so they hold their shape during baking)
To Make:
Preheat & Prep: Preheat your oven to 170°C (150°C fan) / 340°F. Grease or line a mini muffin tin.
Melt the Chocolate: Gently melt the chocolate and butter together in a heatproof bowl over a pan of simmering water, or in short bursts in the microwave. Stir until smooth and glossy.
Mix the Batter: Whisk in the sugar until combined. Add the eggs one at a time, mixing well after each. Fold in the flour until you have a thick, glossy batter.
Scoop & Fill: Spoon a little batter into each mini muffin case (just under halfway). Press a frozen Rolo into the centre of each, then cover with a little more batter to hide the Rolo.
Bake: Bake for 10–12 minutes, until the tops are set but still soft in the centre. Don’t overbake — you want them gooey!
Cool & Serve: Let them cool in the tin for 5–10 minutes before transferring to a wire rack. Serve warm with ice cream, or let cool and enjoy as a cheeky afternoon treat.
