Anzac Cookie Ice Cream Sandwiches – A Cool Twist on a Classic Biscuit
Crunchy-chewy Anzac cookies sandwiched around scoops of your favourite ice cream — this is summer snacking at its most irresistible. A little nostalgic, a little indulgent, and wonderfully easy to make.
Anzac biscuits are a beloved tradition in Australia and New Zealand, originally baked during wartime using simple, affordable ingredients. But in my book, those humble pantry staples come together to make one of the tastiest biscuits in the tin.
And now that it’s getting lighter, brighter, and yes — finally warmer! — we’re heading full speed into BBQ season (hooray!). So here’s a dessert that’s as easy as it is crowd-pleasing: Anzac Cookie Ice Cream Sandwiches. They’re simple to make, fun to eat, and guaranteed to be a post-BBQ hit.
Ingredients
(Makes approx. 6–8 sandwiches)
75g (½ cup) plain flour
95g (½ cup + 1 tbsp) soft brown sugar
50g (½ cup) porridge oats
3 tbsp desiccated coconut
60g (¼ cup) unsalted butter
1 tbsp golden syrup
2 tsp water
½ tsp bicarbonate of soda
Your favourite ice cream, for filling (vanilla works great — peanut butter if you can find it!)
To Make:
Preheat & Prep: Preheat your oven to 160°C (140°C fan) / 325°F. Line a baking tray with parchment paper.
Mix the Dry: In a bowl, stir together the flour, brown sugar, oats, and desiccated coconut.
Melt the Wet: In a small saucepan, melt the butter, golden syrup, and water over low heat. Once melted, remove from heat and stir in the bicarbonate of soda — it will fizz a little!
Combine: Pour the wet mixture into the dry and stir until fully combined. You should have a soft, sticky dough.
Shape & Bake: Scoop tablespoons of dough and roll into balls. Place on the tray and flatten slightly — leave space between them, as they’ll spread. Bake for 10–12 minutes until golden and slightly firm on the edges. Let cool completely.
Assemble the Sandwiches: Once the cookies are cool, sandwich a scoop of your favourite ice cream between two. Press gently and enjoy straight away — or wrap and freeze for later.
